10 October 2025 – Raffles Udaipur announces an exclusive culinary collaboration with celebrated Goan-Portuguese chef Avinash Martins, known for his deeply rooted philosophy of cooking with conscience and reverence to terroir. On the evenings of 11th and 12th October 2025, The Dining Room at Raffles Udaipur will transform into a canvas of flavours, where tradition and innovation come together in a thoughtfully crafted dinner experience.
Chef Martins, the culinary mind behind Goa’s acclaimed Cavatina, recognised amongst the Top 50 Restaurants 2025 by Conde Nast Traveller India and Janot, is renowned for his ability to weave storytelling into every plate, reflecting his Goan heritage through global sensibilities. His approach highlights a connection to the land and its produce, while presenting cuisine that is simultaneously nostalgic and avant-garde.
Guests at Raffles Udaipur will be invited on a journey across a menu curated exclusively for these two evenings. Beginning with small plates such as Tambdi Bhaaji Spanakopita with cashew butter, Jackfruit Haleem cutlets with apricot chunda and mint, and Hoppers à la Janot, the experience unfolds with a symphony of textures and flavours. The mains bring forward the richness of coastal and seasonal inspirations, including Charred roasted sweet potato with stracciatella and Mathania chili rassa, Paneer roulade in roasted coconut ghassi with pandan jasmine rice, and Lamb Chops Xacutti with bheja 65 and bhajara refogado.
